Eating food rich in vitamin C is vital in ensuring our immune system stays strong. Our immune systems are often likened to little armies, with “branches” and “soldiers” playing various roles in protecting us. While this amount is more than sufficient to prevent the scourge of the sea, scurvy, it’s not enough to reach optimal plasma levels. Ideally, your regular dietary intake should be between 100-200mg/day. Studies show that most individuals with low levels of vitamin C (plasma ascorbate levels under 23 μmol/L) are able to reach optimal plasma levels in one to two weeks with this amount.
